Directions:


  1. In a cozy saucepan that seems to have been crafted for holiday moments, whisk together the cocoa powder, sugar, and a pinch of salt, infusing the mixture with love and anticipation.

  2. Add hot water and let the cocoa magic simmer. Stir this brew of dreams constantly, feeling the warmth and cocoa essence infuse the air.

The holidays are all about warmth, joy, and cherished traditions. One of my favorite traditions is sipping on rich and creamy eggnog while gathered with loved ones. There's something truly magical about this festive concoction that makes it the perfect companion for holiday gatherings.


In this blog post, I'm excited to share my homemade eggnog recipe with you. But first, let me introduce myself. I'm Lainie Eilenberger, a dedicated real estate agent with Key and Slate Real Estate Group, serving Lubbock and West Texas. Just as eggnog brings comfort and joy to your holiday season, I'm here to bring you comfort and confidence in your real estate journey. The Perfect Eggnog Recipe:


Ingredients:


  • 6 large egg yolks

  • 3/4 cup granulated sugar

  • 2 cups whole milk

  • 1 cup heavy cream

  • 1 teaspoon pure vanilla extract

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon ground cloves

  • 1/8 teaspoon salt

  • 3/4 cup bourbon or dark rum (optional)

  • 1/4 cup spiced rum (optional)

  • Whipped cream and ground nutmeg for garnish

Directions:


  1. In a medium mixing bowl, whisk together the egg yolks and sugar until the mixture becomes pale and slightly thickened.

  2. In a saucepan over medium heat, combine the whole milk, heavy cream, vanilla extract, nutmeg, cinnamon, cloves, and salt. Stir continuously until the mixture is hot but not boiling.

  3. Slowly pour a small amount of the hot milk mixture into the egg yolks, whisking constantly to temper the yolks. Gradually add more of the hot milk mixture while continuing to whisk.

  4. Once the egg yolks are tempered, pour the entire mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 160°F). Be careful not to let it boil, as this can cause the eggs to curdle.

  5. Remove the mixture from heat and strain it through a fine-mesh sieve into a large bowl to remove any lumps. Allow it to cool for about 10 minutes.

  6. If desired, add the bourbon and spiced rum to the eggnog and stir well. You can adjust the amount to your taste preference or omit the alcohol entirely for a non-alcoholic version.

  7. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

  8. Serve the chilled eggnog in glasses, garnished with a dollop of whipped cream and a sprinkle of ground nutmeg.

Join me on this journey as we whip up a scrumptious Chocolate Cake with Chocolate Icing, a perfect treat for any occasion.


Baking Bliss: Chocolate Cake and Real Estate

Chocolate Cake Recipe


Ingredients:


  • 2 cups all-purpose flour

  • 1 ¾ cups granulated sugar

  • ¾ cup unsweetened cocoa powder

  • 1 ½ tsp baking powder

  • 1 ½ tsp baking soda

  • 1 tsp salt

  • 2 eggs

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 2 tsp vanilla extract

  • 1 cup boiling water

Directions:


  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Stir in the boiling water. The batter will be thin; don't worry, that's what makes it moist!

  5. Pour the batter evenly into the prepared pans.

  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Chocolate Icing


Ingredients:


  • 1 cup (2 sticks) unsalted butter, softened

  • 1 ½ cups unsweetened cocoa powder

  • 5 cups confectioners' sugar

  • ½ cup milk

  • 2 tsp vanilla extract

  • A pinch of salt

Directions:


  1. In a large mixing bowl, sift together the cocoa powder and confectioners' sugar to remove any lumps.

  2. In another bowl, beat the softened butter until creamy.

  3. Gradually add the cocoa mixture, milk, vanilla extract, and a pinch of salt. Beat until smooth and creamy.

  4. Once the cakes are completely cooled, spread a layer of chocolate icing between them and on the top and sides of the cake. Decorate as desired.
