Pumpkin Bread with Cream Cheese Icing Recipe
Ingredients:
1 ½ cups of all-purpose flour
1 ½ teaspoons of pumpkin pie spice
1 teaspoon of baking soda
¼ teaspoon of salt
½ cup of unsalted butter, softened
1 cup of granulated sugar
2 large eggs
1 cup of canned pumpkin puree
½ cup of sour cream
1 teaspoon of vanilla extract
For the Cream Cheese Icing:
4 ounces of cream cheese, softened
½ cup of powdered sugar
1 tablespoon of milk
½ teaspoon of vanilla extract
Instructions:
Preheat your oven to 325°F (165°C) and grease a 9x5-inch loaf pan.
In a bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. Set this dry mixture aside.
In another bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the pumpkin puree, sour cream, and vanilla extract until well combined.
Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix; you want a tender loaf.
Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
While the bread is cooling, prepare the cream cheese icing by beating together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
Once the bread has cooled, drizzle the cream cheese icing over the top.
