Keto-Friendly Key Lime Bars Recipe
Ingredients:
For the Crust:
1 1/2 cups almond flour
1/4 cup powdered erythritol
1/3 cup melted butter
For the Filling:
1/2 cup fresh lime juice
Zest of 2 limes
1 cup powdered erythritol
3 large eggs
1/4 cup heavy cream
Directions:
Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
To make the crust, mix the almond flour, powdered erythritol, and melted butter in a bowl. Press this mixture into the bottom of the prepared pan.
Bake the crust for 10-12 minutes, until it turns golden. Remove from the oven and allow it to cool.
While the crust cools, make the filling by whisking together the lime juice, lime zest, powdered erythritol, eggs, and heavy cream in a separate bowl.
Pour the filling over the cooled crust.
Bake for 18-20 minutes until the filling is set. It should have a slight jiggle in the center.
Let the bars cool to room temperature, then refrigerate for at least 2 hours or until chilled.
Cut into squares, garnish with lime zest or a dollop of whipped cream, and enjoy!
