  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1 (20 oz) can crushed pineapple with juice

  • 1 cup chopped pecans

  • 1 cup shredded sweetened coconut


For the Topping:


  • 1/2 cup (1 stick) unsalted butter

  • 1 cup evaporated milk

  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans

  • 1 cup shredded sweetened coconut


Instructions:


  1. Prepare the Cake: Preheat your oven to 350°F and grease a 9x13-inch baking dish. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Stir in eggs and crushed pineapple (with juice) until just combined. Fold in pecans and coconut. Pour batter into the prepared dish.
